  • EVO
  • Onion
  • Garlic
  • White Wine
  • Asparagus
  • Broccolini
  • Beetroot, Fresh + Juice
  • Vegan Cheese
  • Beetroot Chips
  • Carnaroli Rice
  • Beetroot Puree
  • Vegetable Stock

Instructions & Procedure:

For the Risotto:

  • Sauté garlic and onion in EVO.
  • Toss and cook your Carnaroli rice, and deglaze with white wine,
  • Add hot vegetable stock, then the fresh beetroot, and the beetroot juice.
  • Cook pasta until al dente, then add the asparagus and broccolini.
  • Finish with vegan cheese and add the beetroot puree.
  • Garnish with vegan cheese and beetroot chips.

Serving Temperature

  • Serve hot
