- EVO
- Onion
- Garlic
- White Wine
- Asparagus
- Broccolini
- Beetroot, Fresh + Juice
- Vegan Cheese
- Beetroot Chips
- Carnaroli Rice
- Beetroot Puree
- Vegetable Stock
Instructions & Procedure:
For the Risotto:
- Sauté garlic and onion in EVO.
- Toss and cook your Carnaroli rice, and deglaze with white wine,
- Add hot vegetable stock, then the fresh beetroot, and the beetroot juice.
- Cook pasta until al dente, then add the asparagus and broccolini.
- Finish with vegan cheese and add the beetroot puree.
- Garnish with vegan cheese and beetroot chips.
Serving Temperature
- Serve hot
