Gnocchi Tartuffi | Creamy Comforting Italian Indulgence – Casa Nova

  • Potato Gnocchi
  • Onion, finely chopped
  • Garlic, finely chopped
  • Fresh mushrooms, chopped
  • White Wine
  • Cooking Cream
  • Truffle Paste
  • Shallots, finely sliced
  • Salt & black pepper to taste
  • Parmesan Cheese, finely grated
  • Truffle Oil
  • Fried Sage Leaves
  • Olive oil for sautéing

Step-by-Step Instructions

Step 1: Make the Gnocchi (Optional)

Roast whole potatoes in the oven until tender. Scoop and mash until smooth. Combine with egg yolk, Parmesan, and flour. Roll and cut into gnocchi pieces.

Step 2: Boil the Gnocchi

In a pot of salted boiling water, cook the gnocchi until they float to the surface. Once done, drain and set aside.

Step 3: Sauté the Sauce

In a pan over medium heat, warm a splash of olive oil. Add chopped onion and garlic, sauté until golden and fragrant.

Step 4: Build the Creamy Truffle Sauce

Add the mushrooms and sauté until soft. Pour in the white wine and cook until the alcohol evaporates. Stir in the cream, truffle paste, salt, pepper, and shallots. Simmer gently for 3–4 minutes until the sauce becomes rich and creamy.

Step 5: Finish, Plate, and Garnish

Add the cooked gnocchi to the pan and toss gently in the sauce. Stir in grated Parmesan and cook for another minute. Serve hot, garnished with fresh Parmesan shavings, a drizzle of truffle oil, and crispy fried sage leaves.

Serving Temperature

  • Serve piping hot, straight from the pan. Best enjoyed with a glass of Chardonnay or an earthy Pinot Noir.
